Pirate’s Delight Pineapple Rum Cake

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1 and 1/2 cups granulated sugar
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup pineapple juice
  • 1/4 cup dark rum
  • 1/2 cup crushed pineapple, drained

For the glaze:

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/4 cup dark rum
  • 1/4 cup pineapple juice

Directions:

  1. Preheat the oven to 350°F. Grease a 9-inch cake pan with butter and lightly dust with flour.
  2. In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Add the vanilla extract, pineapple juice, and dark rum and mix until combined.
  4. Slowly add the dry ingredients to the wet mixture, mixing until just combined. Fold in the crushed pineapple.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. While the cake is baking, make the glaze. In a saucepan, melt the butter over medium heat. Add the brown sugar, dark rum, and pineapple juice, stirring until the sugar is dissolved.
